Bratkartoffeln
German baked potatoes with fried onion and bacon. A superb dish that goes so well with a good piece of meat of Schnitzel. This is dish which being served all over Germany and you need to try it.
Serves: 4
Preparation time: 60 minutes
Ingredients:
• 1 kilo / 2.2 pounds of potatoes
• 200 gr / 0.5 pounds of (smoked) bacon in cubes
• 2 big onions in rings
• 1 stick of butter or lard
• Salt and black ground pepper to taste
Steps
1. Peel the potatoes and cook them in water. As soon as the water starts to boil set a timer for 10 minutes. The potatoes cannot be cooked completely so not more than 10 minutes.
2. Set the potatoes aside to cool off for about 30 minutes
3. Once the potatoes are cooled off cut them in thin slices
4. On a pan add a lot of butter or lard and melt it on medium heat
5. Add the potatoes and start frying them for about 20 minutes by adding additional butter every now and then. The potatoes must become crispy and remain soft inside.
6. Add the cubed bacon and onions and fry for another 20 minutes.
7. Add some salt and black ground pepper to taste and optionally add some freshly chopped parsley. Enjoy!
