Dutch apple pie

The best pie in the world, this is how they make apple pie in the Netherlands.
The combination of apples, raisins and cinnamon is heavenly and perfect during autumn and winter to serve warm. But also cold during spring and summer with some whipped cream. Or maybe try this, a piece of warm apple pie served with a nice scoop of vanilla ice cream.

Prepration time: 90 minutes

Ingredients:

For the pastry
• 100 gr/ ½ cup of sugar
• 200 gr/ 2 sticks of soft butter
• 1 egg
• Small pinch of salt
• 1 teaspoon of baking powder
• 300gr / 2 ½ cup of flour

The filling
• 1.3kg/ 3 pounds of apples
• 80 gr / ½ cup of sugar
• 125 gr / 1 cup of raisins
• 1.5 tea spoon of cinnamon
For the pie
• A round baking form about 25cm / 10 inch in diameter and +/- 10cm / 4 inch high edge

Steps

1. First make the pastry
2. In a bowl mix the sugar with the butter egg and salt
3. Then add the flour and baking powder and start mixing and kneading for a few minutes until you end up with a nice round ball of pastry.
4. Wrap the ball of pastry in plastic foil and transfer to the fridge to rest for an hour

5. In the meantime prepare the filling
6. Move the raisins to a bowl and add 250ml/ 1 cup of slightly warm water, let the raisins to rest for 15 minutes
7. Peel and cut the apples in 1 cm / 0.4 inch pieces and cubes and transfer to a bowl
8. When the raisins are ready after 15 min sieve them and transfer the raisins also to the bowl
9. Now add the sugar and the tea spoon of cinnamon and mix everything until all is covered by the sugar and cinnamon

10. Pre heat the oven on 200°C/ 400°F

11. Take the pastry from the fridge and use a rolling pin to flatten the pastry until you have a thickness of 4mm/0.16 inch.
12. Take the pie baking form and grease the bottom and sides with a little butter
13. Use about 80% of the pastry to cover the bottom and sides, use your fingers to spread the pastry and ensure you have an even thickness

14. Now add all of the apple raisin mixture to the pie
15. Use the remaining 20% of the pastry to make long stripes.
16. Attach the pastry stipes on top of the pie so you have a cross pattern as seen on the picture above
17. Bake the pie in the middle of the oven for about 50 minutes. When done and cooled carefully remove from the baking form. Enjoy!
