Gong Bao Chicken

Gong Boa Chicken, deep salty flavors from Asian soy sauces and ingredients combined with tender chicken and Cashew nuts.

Preparation time: 60 minutes

Ingredients:

For the chicken and marinate:
• 500 gr / 1.1 pound of Chicken (filet / breast)
• 2 teaspoons of salt
• 3 tablespoons of Oyster sauce
• 1 good pinch of ground black pepper
• 3 tablespoons of oil

For the sauce:
• 4 cloves of garlic
• 1 ½ red chili peppers
• Oil
• 150ml / 2/3 cup water
• 75ml / 1/4 cup of light soy sauce
• 1 tablespoons Oyster sauce
• A small tin of tomato paste
• 2 tablespoons of sugar
• 6 teaspoons of rice wine
• 1 tablespoons of vinegar
• 1 tablespoons of dark and sweet soy sauce

Others:
• 1 large carrot in slices
• 1 cucumber, unseeded and chopped in quarters
• 2 onions cut in rings
• 3 chopped spring onions
• 15 Mushrooms in slices
• 2 teaspoons of rice wine
• 1 teaspoon of sesame oil
• 60gr / ½ cup of unsalted Cashew nuts

Steps

1. Start by cutting the chicken in stripes, transfer to a bowl and add the salt, Oyster sauce, ground black pepper and the oil. Mix well and transfer the chicken to the fridge to marinate for about 2 hours.

2. In the meantime make the sauce by adding the garlic, chili peppers with a little oil into a kitchen machine and mix until you have a fine paste
3. Fry the paste in a little oil on medium heat for about 10 minutes, keep constantly stirring so you avoid the paste to burn.
4. Add the water, light soy sauce and the Oyster sauce and cook for 5 minutes
5. Then add the sugar, rice wine, vinegar, and the dark Soy sauce. Cook for 2 minutes and set aside

6. Take a big pan and stir fry the carrots, onion, spring onions and mushrooms for about 7 minutes, transfer the fried vegetables to a bowl and set aside.

7. When the chicken has been marinated fry it in a little oil until done, this usually takes about 15 / 20 minutes. Add the stir-fried vegetables and also the chopped cucumber.
8. Pour in the sauce, mix well, and let all ingredients simmer on a medium heat for 5 minutes.
9. Add the rice wine, sesame oil and in the very end the Cashew nuts. Enjoy!
