Homemade Madeira sauce

In our opinion THE best sauce that pairs best with pork meat. A classic sauce based on Madeira wine, a sweet Portuguese wine from Madeira. A sauce with many complex and deep flavors.

Serves: 1 liter / 5 cups

Preparation time: 1 hour

Ingredients:

• 1 onion finely diced
• 1 carrot finely diced
• 100 gr / half a cup of mushrooms in quarters
• 2 teaspoons of dry or fresh thyme leaves
• 4 tablespoons of unsalted butter
• 2 tablespoons of tomato paste
• 3 tablespoons of flour
• 160ml 2/3 cup of Madeira wine (Portuguese sweet wine from the island of Madeira)
• 700 ml / 3 cups of water
• 1 ½ beef stock cube
• 2 bay leaves

Steps

1. Put a cooking pot on medium heat and add 1 tablespoon of butter. Once the butter is melted add the onion, carrot and mushrooms and cook for about 10 minutes.
2. Add the tomato paste and cook for one 1 minute to take the sour taste away.
3. After one minute ad the flour and stir with all ingredients and cook for about 3 minutes
4. Add half of the Madeira, all the water, the 1 ½ stock cube and the 2 bay leaves.
5. Cook for about 40 minutes on medium fire.
6. After 35 minutes you have the following 2 options. For the traditional sauce you need to remove all the ingredients (bay leaves, thyme all vegetables) by using a sieve. Or you can decide for a sauce with vegetables by just taking out the bay leaves only.
7. Add the remaining Madeira wine and cook for another 5 minutes
8. Add the remaining 3 tablespoons of butter to the sauce and slowly stir. Enjoy!
