Thai non spicy curry paste

Thai curry pastes are usually full of chili peppers, extremely hot and spicy. Not everyone’s favorite, especially not for children. This is a curry paste that is not spicy at all and is a good paste if you want to taste the real Thai cuisine leaving out all the hotness.

Preparation time: 15 minutes

Ingredients:

• 1 tablespoon of coriander seeds
• 1 tablespoon of cumin seeds
• 2 big tablespoons of peanut butter
• 3 pieces of lemon grass only the white part
• 8 gloves of garlic
• 3 cm piece of peeled Laos (family of ginger)
• 1 onion in quarters
• 1 tablespoon of finely chopped Thai basil or regular basil
• 2 tablespoons of finely chopped coriander including the stalks
• 5 Kaffir lime leaves fresh or frozen
• 1 teaspoon of Thai scrimp paste
• Juice of one lime

Steps

1. Place a pan on medium heat and add the cumin and coriander seeds and roast them for 3 minutes until you smell all the aromas. Once roasted transfer them to a kitchen blender.
2. Add all the other ingredients to the blender.
3. Now slowly blend all ingredients together for about 10 minutes until you are left with a smooth paste. You can use this paste to make a fresh Thai soup or curry. The paste can be frozen for about 3 months in a closed container.
